Oatmeal Blueberry Muffins

M loves blueberries, she will eat cupfulls if you let her. So I have been trying out different blueberry muffins lately. This is our latest favorite, a healthy muffin for breakfast or a snack, with a great texture.

Oatmeal Blueberry Muffins
1 1/4 cups quick cooking oats
1 cup all-purpose flour (you could use wheat flour to be even healthier)
1/2 cup brown sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
Heaping 1/4 cup applesauce
2 cup small blueberries, or 1 cup large blueberries, rinsed and drained
(You could add some cinnamon, we prefer them without.)

DIRECTIONS
Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and applesauce; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter. Bake at 425 degrees for 15 to 20 minutes.

Makes a dozen muffins. They tend to fall apart when they first come out of the oven, but will firm up after cooling.
